wildbrine® Beet & Goat Cheese Salad


1 cup wildbrine® Beets & Their Greens
1/4 cup extra-virgin olive oil
2 TBSP sherry vinegar
1 tablespoon honey
Thinly sliced red onions
1/2 tsp Dijon mustard
4 cups baby spinach
1/2 cup crumbled goat cheese
1/2 cup chopped walnuts


In a medium bowl, whisk together the olive oil, vinegar, honey, and Dijon. Place the spinach, red onions, the Beets and Their Greens in a large salad bowl. Toss with dressing, and top with the goat cheese and walnuts.
