Yes! You can freeze our products. However, freezing does kill most of the living beneficial bacteria, so most of the probiotic benefits would be eliminated. The veggies will still taste great, but just won't have the same probiotic benefits.
No, you can taste fermented foods fresh from the jar. Just make sure to avoid backwashing into the container as this can introduce bad bacteria into the jar and compromise the ferment.
Let your food hang out on the counter for 10 minutes for the pressure to equalize and make opening much easier. This warms up the lid and makes it easier to open. Or, try flipping the jar upside down on a flat surface. Then try to lightly unscrew the lid.
