1 cucmber, peeled and chopped
2 pounds ripe tomatoes, chopped (about 4 large tomatoes)
½ red pepper, chopped
1 ½ cup wildBrine Coleslaw, lightly drained
¼ cup wildBrine Coleslaw brine
2 TBS tomato paste
Salt and pepper
1 cup Greek yogurt or cottage cheese for garnish
Cherry tomatoes for garnish

In a food processor add chopped cucumber, chopped tomato, coleslaw, coleslaw brine and tomato paste. Pulse until combined and smooth, taste and season with salt and pepper.
Chill for at least 2 hours
To serve place in a bowl top with ¼ cup Greek yogurt or cottage cheese, cherry tomatoes and a scoop of coleslaw
