When incorporating sauerkraut in recipes, we like to keep it in its glorious raw form because live probiotic cultures die when temperatures reach 115°F, taking their health benefits with them. This vegan wrap from Oh My Veggies is positively Reubenesque. Playing on the textures and flavors of the classic corned beef sandwich, it’s made with soy-maple marinated tempeh, creamy avocado slices, cashew Russian dressing, and crunchy sauerkraut.
Lighter and brighter than a typical kraut salad, Kitchen Parade’s modern rendition includes sauerkraut, hominy, black beans, rice vinegar, and English cucumber. This makes a great summer meal or side dish, and it’s easy to bring along to outdoor gatherings.
Courtesy of The Awesome Green, this heaping bowl of deliciousness combines red quinoa, fresh greens, red cabbage sauerkraut, sweet potatoes, pomegranate seeds, red beans, and avocado. This showstopper was a wildbrine “How Wild Do You Like It?” recipe contest winner, and once you taste it, you’ll understand why. Fresh and perfectly balanced, the medley includes wild salmon, fresh dill, mango, avocado, and sauerkraut. Serve this as a light meal or an appetizer.
The name pretty much says it all for this dish by Peanut Butter Runner. Imagine toasted sourdough bread slathered with salted butter, smashed avocado, crunchy green sauerkraut, and soft scrambled eggs. Then take that toast to the next level with a sprinkling of spicy red pepper flakes and a squirt of sriracha.
Technically, this recipe from Cooking Classy calls for shredded red cabbage rather than sauerkraut, but we humbly believe that our Jalapeño Lime Organic Kraut or Raw Organic Red Kraut would catapult these yummy fish tacos straight into the stratosphere.
