Wildbrine fans – we know you like to be “in the know” when it comes our products. We hear you, so here’s the skinny on a recent product change and addition to our delectable line of products, both of which can be found in stores now and online.  

A Makeover Story: wildbrine Miso Horseradish Kimchi

As much as we love our wildbrine products, sometimes they need a subtle makeover to keep up with the times or ingredient changes, and for our Miso Horseradish Kimchi, it was that time. Miso Horseradish Kimchi is a mix of all the right stuff including umami-rich miso, tangy daikon, and earthy hot horseradish, which unite with bright citrus and ginger in a vegan, fish-free and gluten-free kimchi. This kimchi is like a double dose of probiotics with the miso already being fermented from salted grains and beans, which then goes through a secondary fermentation once it’s mixed with the other kimchi ingredients: Napa Cabbage, Daikon Radish, Carrots, Horseradish Root, Tamari, and other spices. 

The Miso Horseradish Kimchi was recently featured in our Veggie Okonomiyaki recipe, which is a popular Japanese dish. Other uses for Miso Horseradish Kimchi include: 

  • Top sausages in place of sauerkraut
  • Use as garnish on a bowl of ramen
  • Try kimchi instead of wasabi on sushi
  • Add to a grilled cheese sandwich
  • Make a beef marinade with the brine

The Shiny New Penny: wildCREAMERY Oat Butter Alternative 

We’re excited to introduce you to our brand new diary-free wildCREAMERY Oat Butter Alternative. We must admit it’s become a bit of a wildCREAMERY darling and it’s all because gluten and nut-free never tasted so delicious! Created for those that cannot tolerate or dislike nuts, our oh-oh oat so creamy, gluten-free, vegan, and organic butter is made from all plant-based ingredients including oat milk, instead of cashews. Like our European Style Butter Alternative, our Oat Butter Alternative has none of the “natural flavors” you might find lurking in other butter alternatives. As with our other wildCREAMERY products, oat butter was created in the kitchen with real food, not in a science lab, in the same way as dairy products. Made with plants and oat milk, the recipe uses the same lactobacillus genus cultures that flavor dairy butter and many cheeses. Yes, we use the ferments from our well-loved brinery products to add creamy goodness to every smear, pat, and spread.

Perhaps the best thing for those with nut allergies is that our Oat Butter Alternative cooks up just like regular butter and makes it simple to modify recipes to be nut-free, vegan with a simple swap. Use it in your favorite vegan cheesecake recipe or keep it simple by slathering it on an English Muffin, adding it to a baked potato, or for sautéing greens. Either way, this Oat Butter Alternative is so good, you’ll think real butter is the alternative.
